Baked Garlic Kale Chips
My life has been filled with lots of drama lately. Work problems, trying to get all my ducks in a row to be able to send my middle child to college, among other things. I try to not let it affect my health, but sometimes it can’t be helped.
That’s why I try to take lots of vitamins and yoga every morning. If I ran, I would do that too, but I really can’t handle running.
Walking, I can handle, so I try to do that whenever possible. I can’t wait for good weather to come so I can get out every day.
Food is a big part of staying healthy as well, so staying away from the bad stuff helps me stay feeling well. I try to include kale in whatever I can sneak it into. It’s not bad seasoned and made as chips baked in the oven is a nice light snack!
Kale Chips and Dip
Ingredients
- bunch kale (12 oz after removed from stems)
- 1 tsp olive oil (spray)
- a sprinkle of garlic powder
- 1/2 cup Parmesan cheese
Instructions
- Preheat oven at 350.
- Cover kale with olive oil and then sprinkle garlic powder over kale. Bake until chips are crisp. Take out of oven and then sprinkle Parmesan over chips.
